In the western US the land is no good for farming due to insufficient moisture and bad, rocky soil. Livestock can eat what grows naturally here so no sense in tearing up the natural environment to convert it into the ecological nightmare that modern industrial farming demands.
Crop production uses a lot more petroleum than ranching. The only reason modern meat production uses so much energy is because we feed them on farm produced grains instead of letting them graze in natural pastures.
Grassfed beef is not environmentally sustainable. The fodder that farmed animals consume is just one of many ways in which animals are an extremely inefficient food source. We're talking about massive amounts of manure, ocean dead zones, methane emissions, excessive water use, air pollution (esp. ammonia), use of antibiotics in farmed animals, pandemic risk, and much more.
Plant-based diets are vastly more efficient and sustainable in all relevant areas - even when compared to organic / local animal products or grassfed beef.
